His match with HBK is definitely my favourite although Ric Flair at Mania 18 is close behind.

i dont get why people like the mania 18 match so much, from my memory it was basically an extended squash with a run-in by AA...

Two stand out for me personally, The one he had against Randy Orton at Wrestlemania 21 I believe. I really thought that Orton was going to break it. He was coming up and it would have been a good way to Springboard his career. When Taker took him up for the Chokeslam and Randy reversed into an RKO I was certain he had the win. Taker kicked out, went on to win the match but it was a great contest.

Last year's HBK vs Taker obviously was amazing. Wrestlemania 17 vs HHH was a good hard hitting contest as well that deserves mention.

Against Diesel, the 1st time against Kane, against Orton, and against HBK. And his matches against Flair and HHH were pretty good too. Honestly it's easier to pinpoint his bad Mania matches out over his good, since at least 10 of his Mania matches were good.

His match against Triple H is pretty great. I have it at ****1/4 myself. I rank it as his best Mania match, with his match with Michaels and his match with Batista closely behind.

Rewatch it again because it was far from a squash match.

His best performances IMO were 12 vs. Diesel, 14 vs. Kane, 17 vs. HHH, 18 vs. Flair, 21 vs. Orton, 23 vs. Batista, 24 vs. Edge, 25 vs. HBK but the match with Shawn last year had me on the edge of my seat more than the other ones.
